With the end of summer means that I won’t have access to my favorite fruits and veggies. So I wanted to share some of my favorite snacks that I love to make in the summer while we can still enjoy them with the few short weeks we have left before fall. Who’s ready? I am!
Watermelon Arugula Salad
This salad is so easy and so refreshing for those hot summer days.
Watermelon – Cut into bite sized pieces
Arugula
Feta
Balsamic Vinegar (optional)
There is no measuring for any of the ingredients. Just as much as you like. Easy peasy.
This is my absolute favorite open faced sandwich. I love, love, love heirloom tomatoes. Sometimes they are hard to find, but they are so tasty. They are the tomatoes that are the different colors like red, yellow, green. These heirloom tomatoes that I found are a beautiful deep red.
French, Italian or sour dough bread sliced. Lightly toasted (optional)
Mayonnaise
1 whole ripe smashed avocado
Sliced tomatoes
Crumbled feta cheese (or mozzarella is another fave)
Salt and Pepper
